Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup full fat coconut milk
  • 1 teaspoon pandan extract
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup freshly grated coconut

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 x 5 inch loaf pan with oil or butter.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, sugar, oil, coconut milk, pandan extract, and lime juice until combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the grated coconut.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.
