Ingredients

  • 1 cup of all-purpose flour
  • 1/2 cup of brown sugar
  • 1/2 cup of gingerbread mix
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cloves
  • 1/4 teaspoon of ground cardamom
  • 2 eggs
  • 1/4 cup of vegetable oil
  • 1/2 cup of chopped nuts (walnuts, almonds, or pecans)
  • 1/4 cup of raisins
  • 2 tablespoons of molasses

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together the flour, sugar, gingerbread mix, baking powder, cinnamon, nutmeg, cloves, and cardamom.
  3. In a separate bowl, beat the eggs, then add the oil, nuts, raisins, and molasses. Mix until thoroughly combined.
  4. Add the wet ingredients to the dry ingredients and mix until everything is combined.
  5. Grease and flour an 8-inch round cake pan and pour the batter into the pan.
  6. Bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let cool before serving.
