Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 teaspoon ground ginger
  • 2 tablespoons vegetable oil
  • 1/4 cup water
  • 1/4 cup sliced green onions
  • 1/4 cup cashews, chopped
  • 1 yellow bowl

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine chicken, bell pepper, garlic, soy sauce, honey, and ginger. Mix until all the ingredients are evenly distributed.
  3. Heat the oil in a large skillet over medium heat. Add the chicken mixture and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.
  4. In a separate bowl, combine the water, green onions, and cashews. Mix until all the ingredients are evenly distributed.
  5. Place the chicken mixture into the yellow bowl. Pour the water mixture over the chicken and stir to combine.
  6. Bake in the preheated oven for 20 minutes. Serve warm.
