Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 eggs

Directions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together almond flour, baking soda, and salt.
  3. In a separate bowl, mix together coconut oil, honey, and eggs until smooth.
  4. Add wet ingredients to dry ingredients and mix until combined.
  5. Using a cookie scoop or spoon, drop dough onto baking sheet in 1-inch (2.5 cm) balls.
  6. Bake for 12-15 minutes, or until lightly golden.
  7. Let cool for 5 minutes before transferring to a cooling rack.
