Ingredients
1 lb of Pad Thai Noodles
2 tablespoons of oil
1 onion, chopped
1 red bell pepper, chopped
1 cup of shredded carrots
2 cloves of garlic, minced
1 tablespoon of fresh ginger, grated
1/4 cup of soy sauce
1/4 cup of brown sugar
2 tablespoons of rice vinegar
2 tablespoons of fish sauce

Directions
Bring a large pot of water to a boil and cook the Pad Thai noodles according to package instructions. Drain and rinse with cold water.
Heat the oil in a large wok or skillet over medium-high heat. Add the onion, bell pepper, and carrots and cook for 3 minutes, stirring occasionally.
Add the garlic and ginger and cook for an additional minute.
In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, fish sauce, and red pepper flakes.
Pour the sauce into the skillet and reduce the heat to medium. Simmer for 2 minutes, stirring frequently.
Add the cooked noodles to the skillet and toss to combine. Cook for an additional 3 minutes, stirring occasionally.
Garnish with the chopped peanuts and cilantro before serving.
