Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1 bell pepper, cut into 1-inch pieces
  • 1/2 cup pineapple chunks
  • 8 wooden skewers, soaked in water for 30 minutes

Directions

  1. In a medium bowl, combine the orange juice, soy sauce, garlic, ginger, pepper, and oil. Stir to combine.
  2. Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for 1 hour.
  3. Preheat the grill to medium-high heat.
