Ingredients

  • 1 lb. beef stew meat
  • 6 cups beef broth
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup semolina flour
  • 1/4 cup water
  • 2 tablespoons butter, melted
  • 1/4 cup freshly chopped parsley

Directions

  1. In a large soup pot, heat the olive oil over medium-high heat. Add the beef stew meat, onion, carrots, celery, garlic powder, parsley, thyme, and black pepper. Cook, stirring frequently, until the beef is lightly browned and the vegetables are tender, about 5 minutes.
  2. Add the beef broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
  3. Meanwhile, in a small bowl, combine the semolina flour, water, melted butter, and parsley. Mix until a thick dough forms.
  4. Using a teaspoon, drop the dough into the soup, making sure to space them out. Simmer for an additional 15 minutes.
