Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 jalapeno peppers, seeded and diced
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground red pepper
  • 3 (15 ounce) cans great northern beans, rinsed and drained
  • 2 (14.5 ounce) cans chicken broth
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 3 cups cooked chicken, shredded
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, bell pepper, garlic, jalapeno peppers, cumin, chili powder, oregano, ground pepper, and red pepper. Cook until vegetables are softened, about 5 minutes.
  2. Stir in the beans, chicken broth, and cream of chicken soup. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Stir in the chicken, sour cream, cilantro, and lime juice. Simmer for 5 minutes, or until heated through.
  4. Serve with chopped fresh cilantro, diced avocados, and/or shredded cheese.
