Ingredients
1 pound beef stew meat, cubed
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped

Directions
Heat the olive oil in a large saucepan over medium heat.
Add the beef and onion to the pan and cook until the beef is lightly browned and the onion is translucent, about 10 minutes.
Add the garlic, bell peppers, tomatoes, tomato paste, red wine, oregano, basil, and rosemary to the pan. Stir to combine.
Bring the mixture to a boil, reduce heat, and simmer for 1 hour, stirring occasionally.
Season with salt and pepper to taste and serve with warm pita bread.
Interesting Facts
This stew is a traditional Greek dish called "Stifado".
The red wine adds a rich flavor to the stew, but it is optional.
The stew is even better the next day after all the flavors have had time to develop.
