Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 3 cups fresh corn kernels (from about 4 ears of corn)
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons freshly squeezed lime juice

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic, chili powder, cumin, and smoked paprika and cook, stirring, for 1 minute.
  3. Add the corn kernels and cook, stirring occasionally, until the corn is tender, about 8 minutes.
  4. Stir in the cilantro, salt, and pepper.
  5. Remove from the heat and stir in the lime juice.
  6. Serve warm.
