- 2 tablespoons freshly squeezed lime juice
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic, chili powder, cumin, and smoked paprika and cook, stirring, for 1 minute.
- Add the corn kernels and cook, stirring occasionally, until the corn is tender, about 8 minutes.
- Stir in the cilantro, salt, and pepper.
- Remove from the heat and stir in the lime juice.
