Ingredients

  • 1 cup buckwheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups buttermilk
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons butter, melted

Directions

  1. In a medium bowl, mix together the buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Heat a large skillet or griddle over medium heat. Grease the pan with butter or oil.
  5. Drop about 1/4 cup of batter onto the griddle. Cook until the edges start to dry and small bubbles appear on the surface, about 2 minutes. Flip and cook for another minute or two, until golden brown.
  6. Repeat with the remaining batter, greasing the griddle as needed.
  7. Serve with butter, syrup, or your favorite topping.
