In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined.
Heat a large skillet or griddle over medium heat. Grease the pan with butter or oil.
Drop about 1/4 cup of batter onto the griddle. Cook until the edges start to dry and small bubbles appear on the surface, about 2 minutes. Flip and cook for another minute or two, until golden brown.
Repeat with the remaining batter, greasing the griddle as needed.
