Ingredients

  • 2 tablespoons olive oil
  • 1 pound pork shoulder, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 apples, peeled, cored, and chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 1/2 cup dry white wine
  • 1 tablespoon apple cider vinegar
  • Salt, to taste

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the pork and cook until browned, about 5 minutes. Add the onion and garlic and cook until softened, about 5 minutes. Add the carrots and apples and cook for 2 minutes.
  2. Add the flour, oregano, thyme, sage, and pepper and cook for 1 minute. Add the broth, wine, and vinegar and stir to combine. Bring to a boil, reduce the heat to low, and simmer for 30 minutes.
  3. Taste and adjust the seasoning with salt, if desired. Serve hot.
