Ingredients
1 cup white sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon lemon juice
Food coloring, if desired
Flavoring, if desired
Directions
In a medium saucepan, combine the sugar, corn syrup, and water.
Cook over medium heat, stirring occasionally, until the sugar has dissolved.
Bring to a boil, and cook until the mixture reaches 300°F (150°C) on a candy thermometer.
Remove from heat and stir in the lemon juice.
Add food coloring and flavoring if desired.
Pour into greased molds, or onto waxed paper.
Allow to cool completely before handling.

Hard candy made with sugar, corn syrup and water is known as “rock candy”.
Old-fashioned hard candy has been around since the 1800s.
Adding food coloring and flavoring to hard candy is a relatively modern innovation.
