Ingredients
- 1 pound lean ground beef
- 1 pound mild pork sausage
- 1 cup chopped onion
- 1/2 cup diced green bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15-ounce) pinto beans, drained and rinsed
- 1 can (14-ounce) corn, drained
- 1 can (10-ounce) diced tomatoes with green chilies
- 1 can (10-ounce) tamales, halved
Directions
- Preheat oven to 350°F. Grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, cook the beef, sausage, onion, and bell pepper until the meat is no longer pink. Drain off the fat.
- Stir in the garlic powder, chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.
- Add the beans, corn, and diced tomatoes. Simmer for 5 minutes.
- Spread the meat mixture in the prepared baking dish. Top with the halved tamales.
- Bake for 25 minutes or until the tamales are lightly browned.
