Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper baking cups.
  2. In a large bowl, combine flour, oats, sugar, baking powder, baking soda and salt.
  3. In a small bowl, combine milk, oil, egg and vanilla; stir into dry ingredients just until moistened. Fold in chocolate chips.
  4. Fill greased or paper-lined muffin cups two-thirds full.
  5. Bake at 375°F (190°C) for 20 to 25 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack.
