Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup quick-cooking oats
- 1/4 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Directions
- Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper baking cups.
- In a large bowl, combine flour, oats, sugar, baking powder, baking soda and salt.
- In a small bowl, combine milk, oil, egg and vanilla; stir into dry ingredients just until moistened. Fold in chocolate chips.
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 375°F (190°C) for 20 to 25 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
