Ingredients

  • 3 medium beets
  • 3 potatoes
  • 1 onion
  • 1 cup sour cream
  • 1 tablespoon dill, chopped
  • Salt and pepper to taste

Directions

  1. Peel and cube the beets, potatoes, and onion.
  2. Put all the ingredients in a pot and cover with water.
  3. Bring to a boil, reduce heat, and simmer until the vegetables are tender, about 20 minutes.
  4. Strain the soup and let it cool.
  5. Add the sour cream, stirring to combine.
  6. Taste and adjust salt and pepper as desired.
  7. Serve cold, garnished with chopped dill.
