Preheat oven to 375 degrees F (190 C). Grease a 24 cup mini muffin pan with cooking spray.
Heat oil in a skillet over medium heat. Add onions and garlic and cook until softened, about 5 minutes.
Add mushrooms and cook until softened, about 5 minutes more. Season with salt and pepper.
Remove from heat and stir in cream cheese and shredded cheese. Set aside.
Press a won-ton wrapper into each muffin cup. Divide the mushroom mixture among the won-ton wrappers. Bake for 10-12 minutes, until the edges are golden brown.
Serve warm.
