Ingredients
1 cup creamy peanut butter
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 cup banana chips
Directions
Preheat oven to 375°F. Line a baking sheet with parchment paper.
In a large bowl, combine peanut butter, brown sugar, granulated sugar, egg, baking soda, salt, and vanilla extract. Mix until smooth.
Add the flour and mix until incorporated. Fold in the banana chips.
Drop dough by heaping tablespoons onto the prepared baking sheet. Bake for 10-12 minutes, or until golden brown.
Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
