Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 2 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 1 cup cooked smoked sausage, diced
  • salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the oregano, paprika, cumin, and red pepper flakes and cook for another 2 minutes.
  3. Add the potatoes and vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Add the kale, smoked sausage, and salt and pepper to taste. Simmer for another 10 minutes, or until the kale is tender.
  5. Serve hot with crusty bread.
