Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 2 potatoes, peeled and diced
- 4 cups vegetable broth
- 2 cups chopped kale
- 1 cup cooked smoked sausage, diced
- salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the oregano, paprika, cumin, and red pepper flakes and cook for another 2 minutes.
- Add the potatoes and vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
- Add the kale, smoked sausage, and salt and pepper to taste. Simmer for another 10 minutes, or until the kale is tender.
- Serve hot with crusty bread.
