Sweet Potato Salmon Fish Cakes

Ingredients

  • 1 lb. Salmon fillet, skin and bones removed
  • 1 large sweet potato, peeled and grated
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 egg, lightly beaten
  • 1/4 cup panko bread crumbs
  • 2 tablespoons olive oil, for frying

Directions

  1. In a food processor, combine the salmon, sweet potato, parsley, mustard, garlic powder, onion powder, smoked paprika, salt and pepper. Pulse until everything is combined and there are no large chunks of salmon remaining.
  2. Using a 1/4 cup measure, scoop out the salmon mixture and shape into patties. Place the patties on a plate and refrigerate for 30 minutes.
  3. In a shallow dish, combine the flour, egg, and panko bread crumbs. Dip each patty into the mixture, coating each side. Place the coated patties on a plate.
  4. In a large non-stick skillet, heat the olive oil over medium-high heat. Place the patties in the skillet, and cook for 3-4 minutes per side, or until golden brown and cooked through.
  5. Serve the Sweet Potato Salmon Fish Cakes with your favorite sides.
