Ingredients

  • 1 large potato, diced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced bell peppers
  • 1/2 cup butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine the diced potato, carrots, celery, and bell peppers.
  3. Melt the butter in a medium saucepan over low heat.
  4. Add the Parmesan cheese, salt, and pepper to the melted butter and stir to combine.
  5. Pour the butter mixture over the vegetables and mix until evenly coated.
  6. Transfer the vegetable mixture to a greased 9x13 baking dish.
  7. Sprinkle the mozzarella cheese over the top of the vegetable mixture.
  8. Bake in preheated oven for 45 minutes or until the potatoes are cooked through and the cheese is bubbly.
