Ingredients

  • 1 lb. dry navy beans
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp. dried thyme
  • 1/2 tsp. dried oregano
  • 1/4 tsp. ground black pepper
  • 6 cups chicken or vegetable broth
  • 1 lb. ham, diced
  • Salt and pepper to taste

Directions

  1. Soak the beans in cold water overnight. Drain and rinse the beans.
  2. In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the bay leaves, thyme, oregano, and pepper. Stir and cook for 1 minute.
  4. Add the beans, broth, and ham. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour, stirring occasionally.
  5. Remove the bay leaves and season with salt and pepper to taste. Serve hot.
