Ingredients
1 lb. dry navy beans
1 large onion, diced
2 cloves garlic, minced
2 bay leaves
1 tsp. dried thyme
1/2 tsp. dried oregano
1/4 tsp. ground black pepper
6 cups chicken or vegetable broth
1 lb. ham, diced
Salt and pepper to taste
Directions
Soak the beans in cold water overnight. Drain and rinse the beans.
In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
Add the bay leaves, thyme, oregano, and pepper. Stir and cook for 1 minute.
Add the beans, broth, and ham. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour, stirring occasionally.
Remove the bay leaves and season with salt and pepper to taste. Serve hot.
