Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons granulated sugar for rolling

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
  4. Gradually stir in the dry ingredients. Blend in the lime juice and mint leaves.
  5. Roll the dough into walnut sized balls and roll in the remaining sugar. Place on baking sheets 2 inches apart.
  6. Bake for 12 to 15 minutes, or until lightly golden. Let cool on baking sheets for a few minutes, then transfer to a wire rack to cool completely.
