Ingredients
- 2 large beets, peeled and diced
- 2 cups baby spinach
- 1/4 cup feta cheese, crumbled
- 1/4 cup pecans, chopped
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 2 teaspoons Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Directions
- Preheat oven to 400 degrees F. Place beets in a roasting pan and roast for 20 minutes, or until tender.
- In a large bowl, combine spinach, feta, and pecans.
- In a small bowl, whisk together olive oil, vinegar, mustard, garlic, salt, and pepper.
- When beets are cooked, add to the spinach mixture and toss to combine. Drizzle with dressing and toss to coat.
- Serve immediately.
