Ingredients
2 large beets, peeled and diced
2 cups baby spinach
1/4 cup feta cheese, crumbled
1/4 cup pecans, chopped
1/4 cup olive oil

Salt and pepper, to taste
Directions
Preheat oven to 400 degrees F. Place beets in a roasting pan and roast for 20 minutes, or until tender.
In a large bowl, combine spinach, feta, and pecans.
In a small bowl, whisk together olive oil, vinegar, mustard, garlic, salt, and pepper.
When beets are cooked, add to the spinach mixture and toss to combine. Drizzle with dressing and toss to coat.
Serve immediately.
