Ingredients

  • 2 cups fresh rhubarb, diced
  • 2 cups fresh cherries, pitted and halved
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 2 (9 inch) unbaked pie crusts

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine rhubarb, cherries, white sugar, brown sugar, cinnamon, nutmeg, cardamom, flour, and salt. Mix until evenly blended.
  3. Cut the butter into small pieces and add to the rhubarb mixture. Stir until evenly blended.
  4. Line a 9 inch pie plate with one of the pie crusts. Pour the rhubarb mixture into the crust, and top with the remaining crust. Crimp the edges to seal.
  5. Bake in preheated oven for 30 minutes, or until crust is golden brown.
