Ingredients

  • 1 cup dried white beans
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Directions

  1. Soak the beans overnight in cold water.
  2. Drain and rinse the beans.
  3. In a large pot, heat the olive oil over medium heat.
  4. Add the onion, celery, and carrots and sauté for 5 minutes.
  5. Add the garlic and sauté for another minute.
  6. Add the beans, thyme, oregano, bay leaf, vegetable broth, and 4 cups of water.
  7. Bring to a boil, then reduce heat to a simmer.
  8. Simmer for 1 hour, or until the beans are tender.
  9. Season with salt and pepper, to taste.
  10. Serve hot.
