Ingredients
1 cup dried white beans
1 onion, diced
2 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 teaspoon dried thyme

Directions
Soak the beans overnight in cold water.

Season with salt and pepper, to taste.
Serve hot.
