Ingredients

  • 3 tablespoons of butter
  • 2 cups of chopped celery
  • 1 onion, chopped
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of oregano
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 4 cups of vegetable stock
  • 1/4 cup of all-purpose flour
  • 2 cups of low-fat milk
  • 2 tablespoons of parsley, chopped

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped celery and onion to the pot and cook for 5 minutes, stirring occasionally.
  3. Add the thyme, oregano, black pepper, and salt to the pot. Stir to combine.
  4. Add the vegetable stock and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  5. In a separate bowl, whisk together the flour and milk. Pour the mixture into the pot and stir to combine.
  6. Continue to cook over low heat for 5 minutes, or until the soup has thickened.
  7. Remove from heat and stir in the chopped parsley.
  8. Serve the soup hot with a sprinkle of additional parsley, if desired.
