Ingredients
3 tablespoons of butter
2 cups of chopped celery
1 onion, chopped
1/2 teaspoon of thyme
1/2 teaspoon of oregano

Directions

Continue to cook over low heat for 5 minutes, or until the soup has thickened.
Remove from heat and stir in the chopped parsley.
Serve the soup hot with a sprinkle of additional parsley, if desired.
