Place the tofu on a plate or cutting board lined with paper towels. Cover with more paper towels and press gently to remove as much moisture as possible. Crumble the tofu with your hands and set aside.
In a large skillet, heat the oil over medium heat. Add the onion and bell pepper and cook for 3-4 minutes, until softened.
Add the garlic, ginger, garam masala, cumin, coriander, turmeric, chili powder, cayenne pepper, black pepper, and sea salt. Cook for 1 minute, stirring constantly.
Add the crumbled tofu and cook for 5-6 minutes, stirring occasionally.
Stir in the cilantro and vegan yogurt, if using. Cook for 1 minute, stirring constantly.
Serve hot, over rice or with naan.
