Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds boneless beef chuck, cut into 1-inch cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 1 (14.5-ounce) can beef broth
  • 1 (15-ounce) can black beans, drained and rinsed

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the beef and cook until lightly browned, about 5 minutes.
  2. Add the onion, garlic, oregano, cumin, chili powder, and salt and cook for an additional 5 minutes.
  3. Add the tomatoes, chiles, and beef broth and bring to a boil.
  4. Reduce the heat to low and simmer, covered, for 1 hour.
  5. Add the beans and simmer for an additional 30 minutes.
  6. Serve with warm tortillas.
