2 lb. Yukon Gold potatoes, peeled and thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter, melted
1/2 cup grated cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Directions
Preheat the oven to 375 degrees F.
In a large bowl, combine the potatoes, garlic, olive oil, salt, and pepper. Toss to combine.
Spread the potatoes in a 9x13-inch baking dish. Drizzle with the melted butter.
Bake for 40 minutes, stirring occasionally.
Remove the baking dish from the oven and sprinkle with the cheddar and Parmesan cheeses. Return to the oven and bake for 10 more minutes, or until the cheese is melted and bubbling.
Sprinkle with the chopped parsley and serve warm.
