Ingredients
1 pound mussels, cleaned
3 potatoes, diced
1 onion, diced
2 cloves garlic, minced
1 cup white wine
1 cup chicken broth
2 tablespoons butter

1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon pepper
Directions
In a large pot, heat the butter and olive oil over medium heat.
Add the onion and garlic and sauté for 5 minutes, or until the onion is translucent.
Add the potatoes and sauté for an additional 5 minutes.
Pour in the white wine and chicken broth and bring to a boil.
Add the mussels, thyme, parsley, salt, and pepper and stir to combine.
Reduce the heat to low, cover the pot, and simmer for 10 minutes, or until the mussels have opened.
Discard any mussels that have not opened.
Serve warm with crusty bread.
