Ingredients

  • 1 cup quinoa
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup pitted olives, sliced
  • 1/2 cup cooked chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Directions

  1. Cook the quinoa according to package instructions.
  2. In a large bowl, combine the cooked quinoa, bell pepper, red onion, olives, and chickpeas.
