Ingredients

  • 1 pound of diced ham
  • 1/2 pound of bacon, diced
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • 6 cups of chicken broth
  • 2 cans of white beans, drained and rinsed
  • Salt and pepper to taste

Directions

  1. In a large pot, cook the bacon over medium heat until crispy.
  2. Remove the bacon from the pot and set aside.
  3. Add the olive oil to the pot and heat over medium heat.
  4. Add the onion, carrots, celery, and garlic to the pot and cook until the vegetables are softened, about 5 minutes.
  5. Add the ham, oregano, thyme, and paprika to the pot and cook for 2 minutes.
  6. Add the chicken broth and beans to the pot and bring to a boil.
  7. Reduce the heat and simmer for 30 minutes.
  8. Add salt and pepper to taste.
  9. Serve the soup with the bacon on top.
