Ingredients
- 1 pound of diced ham
- 1/2 pound of bacon, diced
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 stalks of celery, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of smoked paprika
- 6 cups of chicken broth
- 2 cans of white beans, drained and rinsed
- Salt and pepper to taste
Directions
- In a large pot, cook the bacon over medium heat until crispy.
- Remove the bacon from the pot and set aside.
- Add the olive oil to the pot and heat over medium heat.
- Add the onion, carrots, celery, and garlic to the pot and cook until the vegetables are softened, about 5 minutes.
- Add the ham, oregano, thyme, and paprika to the pot and cook for 2 minutes.
- Add the chicken broth and beans to the pot and bring to a boil.
- Reduce the heat and simmer for 30 minutes.
- Add salt and pepper to taste.
- Serve the soup with the bacon on top.
