Ingredients

  • 1 whole chicken, cut into pieces
  • 1 lb andouille sausage, sliced
  • 1 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cooked rice, for serving

Directions

  1. In a large Dutch oven, brown the chicken pieces in a little oil over medium heat. Remove and set aside.
  2. In the same pot, brown the sausage slices until crispy. Remove and set aside.
  3. In the same pot, heat the vegetable oil over medium heat. Gradually stir in the flour to make a roux, cooking until it turns a deep caramel color.
  4. Add the onions, bell peppers, and celery to the roux and cook until vegetables are softened.
  5. Stir in the garlic, tomatoes, chicken broth, bay leaves, thyme, oregano, paprika, salt, and pepper.
  6. Add the chicken and sausage back to the pot. Bring to a boil, then reduce heat and simmer for 1-2 hours until chicken is tender.
  7. Serve the gumbo hot over cooked rice.
