Ingredients
- 2 pounds beef stew meat, cut into bite-sized cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cut into chunks
- 1 bell pepper, diced
- 1 cup diced tomatoes
- 4 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Directions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the beef cubes in batches and brown them on all sides. Remove and set aside.
