Ingredients

  • 4 pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro

Directions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, mix together the garlic powder, chili powder, cumin, paprika, oregano, salt and pepper.
  3. Rub the pork chops with the spice mixture.
  4. Heat the olive oil in a large oven-safe skillet over medium heat.
  5. Add the pork chops to the skillet and cook until browned, about 3 minutes per side.
  6. Add the chicken broth and diced tomatoes and bring to a simmer.
  7. Transfer the skillet to the preheated oven and bake for 25 minutes.
  8. Remove from the oven and top with the chopped cilantro.
  9. Serve and enjoy!
