Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture.
On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into 2 inch circles and place on the prepared baking sheet. Bake for 10 minutes in the preheated oven.
Fill the cooled cookies with strawberry jam, pressing gently to spread it evenly. Place a second cookie on top of each filled cookie, and press the edges together to seal.
Serve immediately or store in an airtight container.
