1 (10-ounce) package corn tortillas, cut into strips
1 (8-ounce) package shredded Mexican-style cheese
Directions
Preheat the oven to 350 degrees F.
In a large skillet over medium heat, cook the ground beef, onion, and bell pepper until the beef is browned and the vegetables are tender, about 10 minutes. Drain off any excess fat.
Mix in the green chiles, black beans, corn, enchilada sauce, jalapenos, chili powder, garlic powder, and cumin. Simmer for 5 minutes.
Spread half of the tortilla strips in the bottom of a 9x13-inch baking dish. Top with half of the beef mixture, then sprinkle with half of the cheese.
Repeat the layers with the remaining tortilla strips, beef mixture, and cheese.
Bake for 25 minutes, or until the cheese is melted and bubbly.
