Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cans black beans, drained and rinsed
  • 1/2 cup salsa
  • 4 cups chicken broth
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and bell pepper and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the black beans, salsa, chicken broth, and chili powder and bring to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Taste and season with salt and pepper as needed.
  7. Serve hot with your favorite toppings.
