Ingredients
- 1 cup of light brown sugar
- 3/4 cup of salt
- 1 liter of cold water
- 2 bay leaves
- 2 tablespoons of black peppercorns
- 2 tablespoons of coriander seeds
- 2 tablespoons of dried thyme
- 2 tablespoons of dried oregano
- 4 cloves of garlic, peeled and smashed
- 2 tablespoons of olive oil
Directions
- In a large bowl, mix together the brown sugar, salt, water, bay leaves, peppercorns, coriander seeds, thyme, oregano, garlic, and olive oil.
- Place the chicken in a large food-safe container and pour the brine over it, making sure to completely submerge the chicken.
- Cover the container and place in the refrigerator for at least 6 hours (up to 24 hours).
- When the chicken has finished brining, remove it from the brine and pat dry with paper towels.
- Discard the brine and proceed with your recipe as desired.
