Ingredients

  • 1 cup of light brown sugar
  • 3/4 cup of salt
  • 1 liter of cold water
  • 2 bay leaves
  • 2 tablespoons of black peppercorns
  • 2 tablespoons of coriander seeds
  • 2 tablespoons of dried thyme
  • 2 tablespoons of dried oregano
  • 4 cloves of garlic, peeled and smashed
  • 2 tablespoons of olive oil

Directions

  1. In a large bowl, mix together the brown sugar, salt, water, bay leaves, peppercorns, coriander seeds, thyme, oregano, garlic, and olive oil.
  2. Place the chicken in a large food-safe container and pour the brine over it, making sure to completely submerge the chicken.
  3. Cover the container and place in the refrigerator for at least 6 hours (up to 24 hours).
  4. When the chicken has finished brining, remove it from the brine and pat dry with paper towels.
  5. Discard the brine and proceed with your recipe as desired.
