Ingredients

  • 1 cup muesli
  • 1 cup applesauce
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin with butter or cooking spray.
  2. In a large bowl, combine the muesli, applesauce, all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mix together the vegetable oil, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped walnuts (optional).
  5. Fill the muffin tin with the batter and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Remove from the oven and let cool for a few minutes before serving.
