Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon red pepper flakes
  • 1/2 pound Italian sausage, casing removed
  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the paprika, cumin, oregano, chili powder, and red pepper flakes and cook for 1 minute.
  4. Add the sausage and cook until browned, about 5 minutes.
  5. Add the garbanzo beans, diced tomatoes, and chicken broth and bring to a boil.
  6. Reduce the heat to low and simmer for 20 minutes.
  7. Stir in the parsley and season with salt and pepper, to taste.
  8. Serve hot.
