Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon red pepper flakes
- 1/2 pound Italian sausage, casing removed
- 1 (15-ounce) can garbanzo beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes
- 1 cup chicken broth
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the paprika, cumin, oregano, chili powder, and red pepper flakes and cook for 1 minute.
- Add the sausage and cook until browned, about 5 minutes.
- Add the garbanzo beans, diced tomatoes, and chicken broth and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Stir in the parsley and season with salt and pepper, to taste.
- Serve hot.
