  • 1 bunch kale, stems removed and leaves finely chopped
  • 2 tablespoons olive oil
  • 1/4 cup almonds, roughly chopped
  • 1/4 cup dried cranberries
  • 1/4 cup lemon juice
  • Salt and pepper, to taste


  1. In a large bowl, combine the kale, olive oil, almonds, cranberries, and lemon juice.
  2. Mix together until all ingredients are evenly combined.
  3. Season with salt and pepper, to taste.
  4. Serve immediately.
