  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter, melted
  • 3/4 cup white sugar
  • 2 eggs, beaten
  • 1 1/2 cups mashed bananas
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts (optional)


  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch loaf pan.
  2. In a medium bowl, combine flour, baking soda, salt, and cinnamon. In a large bowl, cream together the melted butter and sugar. Beat in the eggs, one at a time, then stir in the mashed bananas.
  3. Stir the dry ingredients into the banana mixture, then fold in the coconut and walnuts (if using). Pour batter into prepared pan.
  4. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
