Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter, melted
- 3/4 cup white sugar
- 2 eggs, beaten
- 1 1/2 cups mashed bananas
- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch loaf pan.
- In a medium bowl, combine flour, baking soda, salt, and cinnamon. In a large bowl, cream together the melted butter and sugar. Beat in the eggs, one at a time, then stir in the mashed bananas.
- Stir the dry ingredients into the banana mixture, then fold in the coconut and walnuts (if using). Pour batter into prepared pan.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
