Divide the beef mixture into four equal portions and place each portion onto a flatbread. Spread the parsley, mint, and tomato mixture on top of the beef.
Bake in the preheated oven for 15 minutes, or until the flatbread is golden brown and the beef is cooked through. Serve hot.
