Ingredients
- 1 lb ground beef
- 1 egg
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 2 tablespoons olive oil
- 1 onion, chopped
- 1/2 cup diced tomatoes
- 1 zucchini, chopped
- 1/2 cup crumbled feta cheese
- 2 cups couscous
Directions
- In a large bowl, mix together the ground beef, egg, breadcrumbs, garlic powder, oregano, and cumin.
- Form the mixture into small meatballs.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the meatballs to the skillet and cook for 5 minutes, or until browned on all sides.
- Add the onion and cook for 2 minutes, or until softened.
- Stir in the tomatoes, zucchini, and feta cheese.
- Reduce the heat to low and simmer for 10 minutes.
- Meanwhile, bring 2 cups of water to a boil in a medium saucepan.
- Stir in the couscous and remove from heat.
- Cover and let stand for 5 minutes, or until all of the water has been absorbed.
- Serve the meatballs over the couscous.
