Ingredients

  • 1 lb ground beef
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1/2 cup diced tomatoes
  • 1 zucchini, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cups couscous

Directions

  1. In a large bowl, mix together the ground beef, egg, breadcrumbs, garlic powder, oregano, and cumin.
  2. Form the mixture into small meatballs.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the meatballs to the skillet and cook for 5 minutes, or until browned on all sides.
  5. Add the onion and cook for 2 minutes, or until softened.
  6. Stir in the tomatoes, zucchini, and feta cheese.
  7. Reduce the heat to low and simmer for 10 minutes.
  8. Meanwhile, bring 2 cups of water to a boil in a medium saucepan.
  9. Stir in the couscous and remove from heat.
  10. Cover and let stand for 5 minutes, or until all of the water has been absorbed.
  11. Serve the meatballs over the couscous.
