Add the cooked lo mein noodles and the diced vegetables to the skillet and cook for an additional 3-4 minutes, stirring often.
In a small bowl, whisk together the soy sauce, rice vinegar, water, and sugar. Pour the sauce into the skillet and cook for 1-2 minutes, stirring constantly.
Serve the lo mein hot with your favorite sides.
