Ingredients

  • 1 package of firm tofu, drained and pressed
  • 3 tablespoons of sesame oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of red pepper flakes
  • 3 cups of cooked lo mein noodles
  • 1/2 cup of low sodium soy sauce
  • 2 tablespoons of rice vinegar
  • 1/4 cup of water
  • 1 teaspoon of sugar
  • 2 cups of diced vegetables of your choice (such as carrots, bell peppers, mushrooms, snow peas, etc.)

Directions

  1. Cut the tofu into 1/2-inch cubes and season with the garlic powder, ginger, and red pepper flakes.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the seasoned tofu cubes and cook until golden brown, about 5 minutes.
  3. Add the cooked lo mein noodles and the diced vegetables to the skillet and cook for an additional 3-4 minutes, stirring often.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, water, and sugar. Pour the sauce into the skillet and cook for 1-2 minutes, stirring constantly.
  5. Serve the lo mein hot with your favorite sides.
