Ingredients

2 cloves garlic, minced

Directions

Add the chicken broth and coconut milk and bring to a simmer.
Add the baby spinach leaves and cook until the spinach is wilted and the chicken is cooked through, about 5 minutes.
Season with salt and pepper, to taste.
Serve over cooked rice or quinoa.
