Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 boneless, skinless chicken breasts, diced into cubes
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 2 cups baby spinach leaves
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the ginger, cumin, coriander, turmeric, and paprika and cook until fragrant, about 1 minute.
  4. Add the chicken and cook until nearly cooked through, about 5 minutes.
  5. Add the chicken broth and coconut milk and bring to a simmer.
  6. Add the baby spinach leaves and cook until the spinach is wilted and the chicken is cooked through, about 5 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve over cooked rice or quinoa.
