Ingredients
- 1 leg of lamb
- 1 cup of ground beef
- 1 onion, diced
- 1 clove of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1/2 cup of red wine
- 1/4 cup of balsamic vinegar
- 2 tablespoons of honey
- 1 cup of fig jam
- 2 tablespoons of fresh basil, chopped
Directions
- Preheat the oven to 350 degrees F.
- In a bowl, combine the ground beef, onion, garlic, oregano, thyme, rosemary, salt, and pepper. Mix until well blended.
- Stuff the leg of lamb with the beef mixture. Secure the opening with kitchen twine or toothpicks.
- Place the lamb in a roasting pan or baking dish and roast for 1 hour.
- In a small saucepan, heat the red wine, balsamic vinegar, honey, and fig jam. Bring to a boil then reduce heat and simmer for 10 minutes.
- Remove the pan from the heat and stir in the fresh basil.
- Drizzle the sauce over the cooked leg of lamb and serve.
