Ingredients

  • 1 leg of lamb
  • 1 cup of ground beef
  • 1 onion, diced
  • 1 clove of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1/2 cup of red wine
  • 1/4 cup of balsamic vinegar
  • 2 tablespoons of honey
  • 1 cup of fig jam
  • 2 tablespoons of fresh basil, chopped

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a bowl, combine the ground beef, onion, garlic, oregano, thyme, rosemary, salt, and pepper. Mix until well blended.
  3. Stuff the leg of lamb with the beef mixture. Secure the opening with kitchen twine or toothpicks.
  4. Place the lamb in a roasting pan or baking dish and roast for 1 hour.
  5. In a small saucepan, heat the red wine, balsamic vinegar, honey, and fig jam. Bring to a boil then reduce heat and simmer for 10 minutes.
  6. Remove the pan from the heat and stir in the fresh basil.
  7. Drizzle the sauce over the cooked leg of lamb and serve.
