Ingredients

  • 2-3 lbs pork spare ribs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup apricot preserves
  • 1/4 cup apple cider vinegar
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon red pepper flakes

Directions

  1. Preheat oven to 375 degrees F. Line a baking sheet with foil.
  2. In a small bowl, mix together the olive oil, garlic, oregano, thyme, and smoked paprika. Season with salt and pepper, to taste.
  3. Rub the spice mixture onto the ribs and place on the prepared baking sheet. Bake for 30 minutes.
  4. Meanwhile, in a medium saucepan over medium heat, combine the apricot preserves, apple cider vinegar, soy sauce, brown sugar, Worcestershire sauce, and red pepper flakes. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 10 minutes.
  5. Remove ribs from oven and brush with the glaze. Return to oven and bake for an additional 1 hour and 30 minutes, brushing with additional glaze every 30 minutes.
  6. Remove ribs from oven and let cool for 10 minutes before serving.
